Butterfly Pea Flower

This Herbal Tea is made from the dried flowers of the Butterfly Pea Plant, Clitoria ternatea. It is commonly served in its native region of southeast Asia at restaurants, spas and hotels. Blend with honey and lemon to create nam dok anchan, a Thai after dinner tea.

Alone, the flowers brew into a stellar sapphire blue tisane that tastes earthy and vegetal. When an acid such as lemon is added, the blue tisane transforms into an alluring amethyst elixir. It can be used to create fantastic desserts and color-changing cocktails.
