Pronounced Fa-HEE-tah, it is a tenderized beef skirt, grilled over mesquite, and accompanied by salsa, guacamole, refried beans, onions, peppers, sour cream and warm flour tortillas. For those who like their meat on the light side, try the chicken version.
To prepare beef fajitas for six, you will need: 3 lb. beef fajitas (or flank steak), 1/4 cup fresh lemon juice, 4 tsp. fajita spice. Sprinkle mix over 3 lbs. prepared fajitas, adding 1/2-1 tsp. salt to taste. Sprinkle 1/4 cup fresh lemon juice. The lemon juice can be omitted and the seasonings used dry if desired or soy sauce can be added with the lemon juice. Cover and refrigerate several hours or overnight.
