This is a wonderful herb flavored marinade can be used with vegetables such as mushrooms, artichokes, or baby carrots with onions.
Needed: 1-1 1/2 lbs. mushrooms, 1/2 cup wine vinegar, 1/4 cup olive oil, 1 tbsp. dried parsley or 3 tbsp. fresh parsley, 1/2 tsp. salt (or more to taste) and 2 tablespoons Marinade Mix.
To prepare: wash and trim mushrooms, cutting in half or in quarters if large. Cook the mushrooms in a small amount of salt water for 4-5 minutes. Combine remaining ingredients and place in a large jar or bowl with a lid. Add hot mushrooms directly to the marinade and shake gently to blend. Cool to room temperature, inverting occasionally. Store in the refrigerator overnight before serving. Will last for several weeks if refrigerated. Serve with toothpicks.
Ingredients: Onion, Garlic, Pepper, Thyme, Oregano, Basil, Chives and Marjoram.
